Fresh Whole Golden Yellow Croaker

Whole fish, gutted and laid out on a plate: a golden-yellow back shading to a bright silver belly, yellow-edged fins and a big, clear eye. They are shallow-bodied and roughly palm-length, and one shot has them grilled with the skin blistered and a wedge of lemon alongside.

The flesh is delicate and flakes easily, so it suits steaming, pan-frying or a short grill. Score the thickest part if you are cooking it whole.
